Host

Working as a host at allta is a fun and challenging role.  You're the first point of contact for our amazing guests so you need to embody our core values. The ideal candidate is bubbly and great with people but also patient, has incredible organisation & communication skills, works well under pressure and is capable of multitasking in a fast paced environment and willing to learn. Some day/day duties include ; 

  • Manage all online bookings through sevenrooms, via phone calls and emails. Assigning tables and assisting guests with all enquiries throughout their entire booking journey. 

  • Develop friendly relations with all guests to create a personal approach to their experience before their reservation, during and after and ensure the waiting team is aware of table turn times.

  • Format and print all food and drinks menu for the upcoming service and create a handover for the team including all dietary requirements and special guest requests.


Front of House

We understand that floor staff is not a job everyone can do. It isn’t about carrying the right dish to the right table but it’s being able to absorb a huge amount of information, sometimes under pressure, while keeping your chin up and maintaining an outstanding service. Think that is tough ? For most of us this can be a casual Monday and we know that. The ideal candidate will be a great team player, customer focused, food and beverages oriented and willing to work with an ever changing menu. We are not looking for robots, we want you to bring your own personality and style to allta and make a mark whilst sticking to our core values.; Some day to day duties include ;

  • Setting up the restaurant according to the daily bookings, standards and requirements and communicating with kitchen and bar in order to deliver a smooth service and staying informed on potential changes.

  • Informing guests on daily drinks and food specials and availability whilst delivering a personalised and outstanding level of service.

  • Maintaining stock list up to date and refilling all areas as needed and helping out other departments when and where needed.


Cocktail Bartenders

We want our drinks programme at allta to be one of the best restaurant bars in the world! From our circular cocktail bar, we will serve inventive cocktails inspired by our approach to Irish ingredients, house fermented flavours and spirits with a sustainable and zero waste philosophy. We will be working with Basalt, a micro distillery to distill all our bespoke house pours and Whiplash brewery for our beers. The ideal candidate will be dedicated to their craft, able to work efficiently and consistently in a fast paced environment while remaining tidy. Will always be creative, inventive, not scared to ask questions and always be willing to learn and be able to evolve our drinks programme. We will be open until 11.30pm and will have day time shifts available. Some day/day duties include ;

  • Work efficiently and make drinks consistently and quickly to our exacting standards for bar and restaurant guests.

  • Be chatty and informative to those dining at the bar, give a high level of service that is also friendly and fun.

  • Stay on top of long lead bar mise en place and work closely in conjunction with the kitchen to produce foraged, fermented and seasonal flavours with a zero waste philosophy and closed loop supply.

  • Make sure high levels of cleanliness are always maintained in the bar, prep and cellar areas.


Barback

There is an old adage that says « behind every great bartenders there is a barback » and that couldn’t be more accurate. In allta we are aware that « behind the scene hands » are important and contribute to the success of the venue. If you come onboard you will understand that this is our philosophy. The ideal candidate will be able to work in full autonomy, anticipate the needs of service during rush hours and be of good communication skills. Some day/day duties include ;

  • Helping out with bar prep and keeping up with the needs of bar supplies during service.

  • Cleaning bar tables and bar areas and ensuring a constant flow of clean and polished glassware.

  • Keeping up with restocking at all times.


Porter

This isn't our first restaurant so we know that great porters are one of the most crucial people to achieving an efficient restaurant with happy guests and staff.  Simple things that make your working life hard in other places are incredibly important to us at Allta to make them as easy as possible in our new home.  It is because of this we have built what we hope to be the most efficient back of house spaces that is an enjoyable place for you to work and incredibly easy to clean with great ventilation, large floor drains and wet walls. You must be incredibly hard working and a pleasure to be around.  It's crucial you see yourself as a huge part of our success. Some day/day duties include ; 

  • Ensuring all back of house areas are kept clean and tidy to our exacting standards.

  • You must be able to quickly wash dishes and equipment for the front and back of house.

  • Be able to keep stock of cleaning equipment and chemicals and store them in accordance with all HACCP guidelines. 

  • Be willing to work with the whole team to achieve our exacting cleanliness standards. 


Baker

Bread and patisserie is very close to our hearts at allta.  From our first little rofco oven in our winebar to our pop up bakery during c***d!  Good bread to eat with food aswell as inventive and delicious patisserie is a core building block of who we think we are and what we want to be!  We have built our new home in the docks with a micro bakery.  This will be equipped with a polin deck oven, proover, blast freeze, pasty laminator and softserve amongst others. Our micro bakery will not only be an integral part of our restaurant offering but will also act as an independent morning time production space for killer pastries and coffee when it opens fully in spring 2024. The ideal candidate must have experience with sourdough made from Irish grains, highly capable of producing all types of laminated pastry and is obsessed with learning about ice creams and all forms of patisserie. Some day/day duties include; 

  • Working closely with the kitchen team to develop sweet and savoury recipes and create a bread and patisserie programme unique and in step with our core values and philosophies. 

  • Ensure our bakery counter is filled with the most delicious sweet and savoury patisserie. Our micro bakery is a light filled space and open so you must be capable of working clean and efficiently. 

  • Mastering the production of our sourdough bread and training our younger chefs and bakers so we can build foundations for growing.


Chef of all levels

We pride ourselves on direct sourcing with farmers, cooking over fire, our house flavour programme and running our kitchen in the most sustainable and zero waste manner. In our new home we will make all our breads and butter, our full fermented larder of irish flavors, go on weekly forages into the wild and will have a full butchery program working with as many full animals as possible. All of this in a beautiful, big and brand new kitchen with central ambach cook suite, Rhys Allen levitation grills and in house micro bakery. It’s a chef's dream!  We are hiring all roles from apprentices to sous chef level and there is room to progress into more senior roles as we open our 20 seater fine dining counter next year.
